salna for parotta

Req items:
egg-2
onion big-1
tomatos-1
ginger-1 piece
garlic-5
red chilli powder-1 tbspn
coriander powder-1 tbspn
garam masala-1 tbspn
salt
coriander leaves

Masla for grinding:
onion big-1
tomatos-1
ginger-1 piece
garlic-5

Prep:
*Keep kadai add oil
*Add onion and tomatoes and saute it
*Add tomatoes and smah it nicely
* Add red chilli powder + coriander powder + garam masala powder
*Add the grounded masala and add water and allow it to boil for some time
*Once the raw smell goes off add the beaten eggs slowly and stiring it continously
*Add the eggs in the watery stage
*Add corinader leaves and serve

Mutton podimas

Req items:
* Mutton--150 gms(minced)
*Onion--1 big
*garlic--10
*ginger
*red chilli powder-1 tbspn
*coriander powder-1 tbspn
*cinnamon-1
*cloves-1
*jeera-1 tbspn
*sombhu-1 tbspn
*coconut -1 tbspn


Prep:
*Cook minced mutton wiht tumeric powder + red chilli pwd+corndr powder+ slat in a cooker
*Keep a kadai add oil and add cinnamon,cloves,jeera,sombhu
*Add onion ,garlic, curry leaves and aute it nicely
 *Add the cooked mutton gravy and fry it in low flame till all the water evaporates
*Add coconut gratings with it

Mutton kola urundai

Reqd items:

*Mutton --150gms(minced)
*Small Onion-5
*garlic-5
*ginger-small portion
*Pottu kadalai--1 tbspn
*cashew--4
*Coconut--1 tbspn
*cloves-2
*cinnamon-1
*sombhu-1 tbspn
*seeragam--1 tbspn
*green chillis--4
* egg--1
*corinader leaves

Prep:
*Keep a kadai add some oil
*Add everything except mutton and saute nicely
*Remove it and allow it to cool
* Add minced mutton and fry in it for 5 minutes
*Once verything gets cooled put in a mixer and grind it nicely wiht some fresh coriander leaves
*Add salt and beaten egg to the mixture
* chk fo rconsistency if req add some besan powder for desigerd consistency
*Make small balls out of it and fry it in a very low flame....it may take some time but its worth

kichidi--NI style

Materials req:
Moong dhal--whole--1 cup
rice--1 cup
jeera--1 tpspn
pepper-5
cloves-2
pattai-2
ghee

cooking method:
* Soak moong dhal previous night
*Pressure cook moong dhal + water+ jeera+ pepper+cloves+ cinnamon+ salt+ ghee
* Add more water and let it cook for extra whistles
* Mash it and serve hot


aloo masala--NI style

Materials req:
Aloo-2
Onion-1
Tomato-1
Ginger-1/2 spn
kasthuri methi
jeera
coriander
tumeric powder
red chilli powder-1tbspn
coriander powder-2 tbspn

Preparation:
* Pressure cook potatoes for 3 whistles
*Keep kadai add jeera,mustard, ural dhal
*add onions and saute it nicely
*add tomatoes and saute it
* now add potatos
*mix tumeric + red chilli powder + corinader powder + salt with water
*Add it to the kadai and allo it to boil
* when it attains curry state add methi leaves + coriander leaves and its ready

bendhi fry--ni style

Materials:
Bindhi
Onion-1
Tomato-1
Coconut

Preparation:
* Cut the bindhis and fry it in oil for some time
*Keep kadai and add jeera,mustard seed
*Saute onion for some time
*Add tomato and fry it
*Now add bindhis and add tumeric powder + red chilli powder + salt
* One its well cooked add the grated coconut and fry until golden brown

Gujarathi tadkha

Materials required:
Curd--1 cup
Water--1 cup
Besan flour---1 spoon

Talika:
oil
jeera
mustard
curry leaves
red chilli
kasthuri methi

Procedure:
* Wipe the curd with out any lumps and add water to it
*Add besan powder to the curd mix
*Keep it in  a kadai and low it to boil in low flame
*After one rolling add the thalidhanam to it
*Allow it to boil for some time and its ready
